On the evening of October 10, 2023, the atmosphere at Luke’s Kitchen at Kimpton Margot Sydney turned festive with a one-night-only event that celebrated Filipino culinary traditions in collaboration with The Filipino Movement Australia, Philippine Airlines, and Australian Pork. This exclusive dining experience transported guests to the culinary heart of the Philippines.

Luke’s Kitchen Head Chef MJ Olguera, drawing from his Filipino roots, crafted a menu that harmoniously blended traditional Filipino flavors with contemporary culinary techniques. The event, priced at $115 per person, commenced at 6 pm, introducing guests to a rich variety of flavors and aromas evocative of a Filipino celebration.

The culinary adventure began with Pica Pica, a dish of Filipino sharing nuts, laying down a warm and inviting atmosphere for the courses ahead. This was followed by the entrée course, Panimula, which delighted the diners with a taste of the ocean through Sydney rock oyster adorned with calamansi granita and avruga caviar, alongside Kilawin scallop dressed in Pinakurat, tomato salsa, and pickled ginger, offering a medley of tangy and spicy flavours to kickstart the meal.

The next course, Pangasinan Maya Maya, celebrated the coastal flavours of the Philippines with a delicate snapper paired with prawn mousse, pumpkin puree, and kangkong. The hearty Lechon course, featuring pork belly, sweet potato, and atchara, encapsulated the essence of Filipino communal feasting.

The sweet closure to the delightful evening came with Coconut Leche Flan, a creamy concoction garnished with finger lime caviar and carabao mango, embodying the tropical sweetness of Filipino cuisine.
