Cebu Pacific, the Philippines’ leading airline, is collaborating with Australian artisan ice cream brand Manila St to celebrate the resumption of its Melbourne-Manila route. The carrier will resume its thrice-weekly flights on Monday, March 27, after a hiatus of approximately three years.
Exclusive new flavour to celebrate route resumption
Cebu Pacific and Manila St have created a specially-developed Calamansi Cheesecake flavour to mark the resumption of flights. Chester Dapo, co-founder of Manila St, said, “We are very proud to be working with the Philippines’ number one carrier, and as part of the partnership, we will be offering free Calamansi Cheesecake ice cream to shoppers and passers-by at Melbourne’s Central Shopping Centre in the heart of the central business district this coming weekend.”

Manila St taps into Filipino culture
Manila St is a business started several years ago by Sydney couple Chester and Michelin Dapo, which now offers a range of Filipino-inspired ice cream flavours through distributors in Australia. Chester said interest in Filipino ice cream had soared in recent times, and that he and his partner harnessed the hugely popular taste of the vivid purple yam called “ube” to create their original flavour, Ube Halaya, and have since expanded their offering.
“Filipinos have long had a love affair with ice cream,” Chester explained. “We have tapped into this burgeoning trend and added a new spin to it with our Calamansi Cheesecake offering, using calamansi, which is a popular type of citrus fruit native to the Philippines.”
Excitement for Melbourne-Manila route resumption
Cebu Pacific’s Carmina Romero expressed excitement about the partnership with Chester and his Manila St brand, emphasizing the strong connection between the Philippines and Australia. Romero also acknowledged the success of Manila St in tapping into Filipino culture and sharing it with the Australian community.
