Filipino Food Movement Australia revives ‘Mabuhay Nights’ in Potts Point, NSW this August

The Filipino Food Movement Australia (FFMA) continues their Mabuhay Nights Pop Up Dining Series this August.

The term ‘Mabuhay’ conveys a myriad of emotions, and to Filipinos, it means “Welcome!”, “To Life!” or even simply a heartfelt “hello”. 

In the Mabuhay spirit this August, the Filipino-influenced menu created by guest chefs Aileen Aguirre and Francis Dela Cruz is inspired by their childhood memories in the Philippines. It will make you want to pull out the karaoke machine and sing along. 

Chefs Aguirre from Bulacan and Dela Cruz from Pampanga will present a special menu made from locally sourced and sustainable Australian native ingredients, using the slow food philosophy with deep, hearty flavours. “We are challenging ourselves with mindful development on cooking practices that steer away from enhancers, bringing a sense of quality, flavour, and health to all our dishes,” Aguirre said. 

Philippine cuisine combines food traditions from various ethnolinguistic groups and tribes. So it’s just natural that Aguirre and Dela Cruz have extraordinary cooking skills made up of influences from different regions. On the menu, you will find Rock oysters kilaw, Dinakdanan Toast, Jervis Bay Mussels Longanissa xo, and spatchcock inasal, to name a few. 

Filipino Food Movement Australia is a group of passionate individuals who believe Filipino cuisine deserves a place on the global menu. Their goal is to promote broader awareness, appreciation, and investment in Filipino culinary arts in Australia.

Through this Mabuhay Nights event, the FFMA acknowledges its Filipino culinary heritage, supporting and elevating the journey of its community, highlighting its food for everyone to enjoy.

Potts Point is the Cosmopolitan Hotspot of Sydney’s Epicurean scene. FFMA is ecstatic to be popping up at Melo’s for this Mabuhay Nights series.
