Filipino World Food Champion Chefs in Australia serve their winning dishes at Enelssie

The fifth Long Table event by the Filipino Chefs Association Victoria (FCAV) led by Business Mentor Alex Apawan Sy and Chef Rommel Cao was hosted by Enelssie Cafe & Grill on 31 July, a month after the 2023 World Food Championship Australia held in Melbourne declared three Filipino Chefs as Champions in their respective categories.

A collaboration among the Champion Chefs: Lyn Richardson, Seafood; Princess Anne Uy, BBQ; and Eloisa Villanueva Nanini, cheese curated their signature winning dishes to some of Melbourne’s Filipino chefs, restaurateurs and guests including the Philippines Consul General, Maria Lourdes “Odette” Salcedo, and Consul Jan Sherwin Wenceslao.

Entree was served with Chef Lyn Richardson’s Snapper “Otak-Otak” with Lobster Roulade and Nyonya Crab Curry Sauce.

This was followed by the main dish by Chef Princess Anne Uy featuring the Cochinillo (Roast Suckling Pig) and Signature Chicken BBQ with Tomato Gastrique, Apple and Ginger Salad, served with Charred Garlic Rice & Grilled Heirloom Vegetables that made her win a Golden Ticket to the World Food Championship in Dallas, Texas USA on 8-12 November.

The refreshing Green Tea, Lemon Lime Granita also by Chef Princess was subsequently served as palate cleanser before finally serving the Leche Flan Cheesecake with Macapuno by Chef Eloisa Nanini to finish off the night.

A few community events are being planned in the next coming months to help raise funds in support of Chef Princess Anne’s competition to Dallas, Texas to represent both Australia and Philippines. Further announcements will be posted on The Philippine Times Facebook page.
